A Valentine's Recipe: Sweet Potato Soufflé

Since it's Valentine's Day here's a sweet recipe. Soufflé​ is something of a misnomer here as this is not a traditional ​soufflé but it's an old family recipe, carrying its name for decades. And it always receives rave reviews. Enjoy!

  • Bake or boil 5 good size sweet potatoes. Baking caramelizes the potatoes a bit which adds to the rich flavor of this dish. To bake, wrap potato in foil and place on a foiled baking sheet in case potatoes leak their syrupyness. 

Mash potatoes with

  • 1 stick butter

then add…

  • ½ cup white sugar
  • 2 beaten eggs
  • ½ cup milk
  • 1 tsp vanilla

Combine well and put in glass baking dish, either 13” by 9” or large round glass dish.

In a med size bowl, mix the topping (tip: it's easier if you mix the flour and pecans, then add the brown sugar)

  • ½ cup flour
  • 1 cup crushed pecans
  • 1 cup brown sugar

Once the flour, pecans and brown sugar are combined add

  • ½ stick melted butter

Mix to combine.

  • Once combined, spread over the top of the potatoes.
  • Bake in 350-400 degree oven for 30-40 minutes.
  • Watch the top as time approaches 30 min as pecans may char. But people love this dish no matter what. Enjoy!
